When I make this, I add a couple of teabags—chai or your favorite spiced tea—to the water when I add the rice. This perfumes everything without the grit of adding ground spices and you can pull them out easily at the end.
The dried fruits and almonds are normally sauteed briefly before being mixed into the cooked rice so that the dish is not dry.
Replace water with chicken broth for more intense flavor

We throw a generous handful of raisins into fresh, salted water with the rice. As the whole concoction cooks, the raisins plump beautifully. I will take the interesting suggestions here as well: adding a chai teabag or subbing in chicken stock.
I’ll be trying this soon! Once a month we pick up a rotisserie chicken and shred some of it over our favorite restaurant pork fried rice. Throw in a scrambled egg or two, a few leftover veggies and were good for a few days.we especially like a little sweet Thai chili sauce drizzled on top. I love flavorful, easy meals like this, especially during the heat of Summer when lazy meal prep is a bonus.
