Papaya and Blueberry Salad With Ginger-Lime Dressing

Ingredients
3 tablespoons freshly squeezed lime juice
1 tablespoon mild honey
2 tablespoons finely chopped crystallized ginger
2 ripe papayas, peeled, seeded, and diced
1 cup blueberries
1 tablespoon slivered fresh mint leaves, plus mint sprigs for garnish
Preparation
- Step 1
Mix together the lime juice, honey and ginger in a large bowl. Add the fruit and slivered mint leaves, and toss together. Serve, garnishing each bowl with a sprig of fresh mint.

Substituted maple syrup for honey and was still outrageously good
Used ginger preserves instead of crystallized ginger. Tasted great

So good!!! Ginger not necessary. I used 1/2 a papaya, and added strawberries and a banana. Mint is important.
Delicious. Successfully rescued an otherwise mediocre papaya. I love the fruit, but it’s rare to find a good one in my part of the country.
Loved the flavours in this! Be sure your papaya is ripe… ours was a bit underripe and the sweetness didn’t come through as well as it would have. The mixture of lime, ginger, honey and mint is so balanced and refreshing.
