  • 12-inch-long vanilla pod, split in two
  • ¼cup sugar
  • 2tablespoons water
  • 3tablespoons dark rum

Preparation

  1. Step 1

    Put the apple quarters in a saucepan or saute pan just big enough to hold them in a single layer. Tuck in the vanilla sections, sprinkle the sugar over the apples and pour the water and the rum over them also.

  2. Step 2

    Cook, covered, over low heat, shaking the pan from time to time, for about 20 minutes, or until the quarters are soft and on the verge of collapse.

  3. Step 3

    Transfer the quarters to a glass serving dish, pour over their juices (the vanilla pod can be dried and reused) and serve tepid.

Tip
  • For a dinner party, serve apples in individual glass dishes. This recipe is adapted from "Lulu's Provencal Table: The Exuberant Food and Wine from the Domaine Tempier Vineyard" (HarperCollins).

Made these for my vegan niece and served with a scoop of vegan vanilla bean ice cream and vegan granola for some texture. It’s was excellent, even the non vegans loved it. I used a tsp of vanilla bean paste instead of the whole bean and a bit more rum than called for because I wanted to add more flavor. Really good!

Made this for a dairy free, refined sugar free, gluten free friend; used honey instead of the sugar and vanilla extract because I didn't have a vanilla bean. Very good! Very easy to whip up on short notice. Will definitely make it again.
