Ingredients
- ½cup unsalted butter, softened
- 1cup brown sugar
- 3tablespoons granulated sugar
- 1egg
- 2teaspoons vanilla extract
- ½teaspoon baking soda
- ½teaspoon baking powder
- ½teaspoon salt
- 1¾cups flour
- 1½teaspoons instant espresso powder, slightly crushed
- 8ounces semisweet chocolate chips
Preparation
- Step 1
Heat oven to 375 degrees.
- Step 2
Cream butter with sugars until fluffy. Beat in egg and vanilla.
- Step 3
Combine dry ingredients, and beat into butter mixture. Stir in chocolate chips.
- Step 4
Drop by large spoonfuls onto a greased cookie sheet. Bake 8 to 10 minutes; 10 to 12 for crispier cookie.

I received this same recipe from a friend years ago, but her instructions differ in that they are baked at 300F for 20 minutes. Tried both and prefer my friend’s method as they result in a cakey cookie-center with crisp edges and very little spread. (Cooked at 375 is still delicious but dry by comparison). Also, the dough freezes beautifully. I shape cookies on tray and freeze for about an hour then store in freezer bag. Bake as much as I want (or as little as I should) from frozen.
Love these cookies. It’s a denser cookie with half the butter and less white sugar.
These are delicious, but I looked at recipe in the NYT cookie book and saw that oatmeal was added, as was grated chocolate, so I improvised: added 1/2 c. Rolled oats and chopped a 4 oz. bar of white chocolate which I added with the chocolate chips.
I remembered the “Neiman Marcus Cookie” saga from my teens, and made them frequently. I was so pleased to come across this, but as I was sliding them in the oven, I had a nagging feeling ingredients were missing. What resulted was a basic chocolate chip cookie (which I initially was open to, since it’s been over 30 years since I last made them). Then I went digging, and found the recipe from my memories elsewhere—there are pecans and oat flakes in the original chain e-mail recipe. Those are the ones I’ll be making again. I’m a big fan of this app! But this recipe is not it.
This does not appear to be true to the original recipe. Firstly, it seems to be a half recipe. Secondly, it doesn’t call for a grated Hershey’s bar or oats.
