@JaneBIVL I have the best method for ripening melons, let them live in your car for a few warm summer days!! it’s perfect:)
This was amazing. I used 3 whole scallions instead of white onion as that's what I had, and I also added a handful of chopped mint, and used less olive oil but just eyeballed that. So refreshing I ate the whole bowl throughout the afternoon!
@JaneBIVL, to find a ripe honeydew, run your open palm across a row of honeydews. If your hand "sticks" to one, it's ripe. Unripe ones are smooth with no "dew" seeping through the skin. Sometimes you'll find that all the honeydews are unripe. Pass on them that day.
This was a winner! I served it at a dinner party and it was a hit. I used mint instead of the dill. As for the melon getting ripe, it spent two days in a brown paper bag on the counter and turned out perfectly.
This salad is a subtle winner! At first I was a slightly underwhelmed, but with each bite I found it grew more and more addictively delicous. By the end of the bowl I wish I had made more! I substituted mint for the dill (I do not like dill). The mint adds a fantastic refreshing zing to each bite.
Is 2 teaspoons of salt a typo? It sounded like a lot, so I used 1 teaspoon, which seemed to be plenty. My store didn't have dill so I substituted mint, which worked well. Next time I would use two avocadoes instead of one.
I also doubted the amount of salt, but decided to use the full 2 tsps. and it tasted good.
