This plush banana cake is finished with a sticky, caramel-like glaze, nodding to the filling in banoffee pie. Similarly to the pie, canned or jarred dulce de leche stands in for homemade caramel and provides a softly sweet, milky flavor that pairs well with the fruity cake. The speedy one-bowl batter uses a combination of oil, buttermilk and dulce de leche to keep the cake moist. Powdered sugar and milk transform more dulce de leche into a glossy glaze while an extra splash of vanilla and salt amplifies its flavor. Though the cake holds its own, a nod to the pie in the form of a dollop of whipped cream and flourish of shaved chocolate wouldn’t be out of place.

  • ¼ cup/50 grams canola or vegetable oil, plus more for greasing the pan 

  • ⅔ cup/142 grams granulated sugar

  • ½ teaspoon baking powder

  • ¼ teaspoon baking soda

  • Kosher salt, such as Diamond Crystal

  • ½ cup/144 grams dulce de leche, divided

  • ⅓ cup/70 grams buttermilk

  • 1 large egg

  • 1¾ teaspoons vanilla extract, divided

  • ⅔ cup/175 grams mashed banana (from about 2 ripe bananas)

  • 1¼ cups/162 grams all-purpose flour

  • ¼ cup/28 grams powdered sugar

  • 1¾ teaspoons milk (any kind)

  • Whipped cream and chocolate shavings, for serving (optional)

Preparation

  1. Step 1

    Heat the oven to 350 degrees. Lightly grease an 8-inch round cake pan with oil and line the bottom with parchment paper.  

  2. Step 2

    In a large bowl, whisk together the granulated sugar, baking powder, baking soda and ¼ teaspoon salt. Add the oil, ¼ cup/72 grams dulce de leche, the buttermilk, egg and 1½ teaspoons vanilla and whisk until smooth. Add the mashed banana and whisk to combine. 

  3. Step 3

    Add the flour, sifting into the bowl if lumpy. Using a flexible spatula, fold until just combined and no dry bits remain. Scrape the batter into the prepared pan and smooth into an even layer. 

  4. Step 4

    Bake until a toothpick inserted into the center comes out clean (a few loose crumbs are OK, but not wet crumbs or batter), about 30 minutes. Cool the cake slightly in its pan on a wire rack, about 10 minutes. Run a thin paring knife or offset spatula around the cake to loosen it, then flip the cake out of the pan, remove the parchment and place it rounded-side up directly on the rack to cool completely. 

  5. Step 5

    While the cake cools, make the glaze: In a bowl or glass measuring cup with a spout, whisk together the powdered sugar, milk, a pinch of salt and the remaining ¼ cup/72 grams dulce de leche and ¼ teaspoon vanilla until smooth. (For a thicker glaze, start with 1 teaspoon milk. Add more milk, ¼ teaspoon at a time, until you reach your desired consistency.) Keep covered until ready to use. 

  6. Step 6

    Transfer the cake to a serving platter. Spoon and spread the dulce de leche glaze over the top of the cake, pushing it out to the edge and letting it drip down the sides as desired. Let set, about 10 minutes (the topping will remain sticky).

  7. Step 7

    Serve in slices, with whipped cream and chocolate shavings if desired. Leftover cake can be stored covered in an airtight container or on a cake stand at room temperature for up to 4 days. 

Tip
  • Alternatively, the cake can be baked in a 9-by-5-inch loaf pan. Grease the pan and line with parchment, leaving an overhang on the long sides to form a sling. Bake the cake until a toothpick inserted into the center comes out clean, about 50 minutes. Cool in the pan 10 minutes before lifting by the sling onto a rack to cool completely, then glaze as instructed.

What kind of dulce de leche did you use and where did you get it?

@Catherine you can just used sweetened condensed milk as a substitute OR if you want the real dulce de leche experience, boil some sweetened condensed milk until it turns golden.

This is basically banana sticky toffee pudding but I can make it in half an hour and I don’t have to fiddle with dates. Yum!

Me again. made this tonight using fresh, not frozen and thawed, bananas and just wanted to testify that the cake was lighter and more cakey with the fresh. Also, ran out of dulce de leche and just made a simple lemon glaze which was delish, but not as good. This is definitely a keeper of a recipe either way! @Jennifer

So, this was delicious and simple. I always have bananas in my freezer, I just pop them in unpeeled when they are about to get too ripe, and it takes about 30 min on the counter to defrost them when I want to use them. Usually for banana bread, but this worked perfectly as well! I hadn't ever made dulce de leche and was a bit afraid, but it went swimmingly! I probably used half the glaze simply because I wanted it to be a bit more decorative--I have nothing against sweetness in a dessert!

really moist and tasty! i made two and then put whipped cream, banana slices, and shaved chocolate between the two layers to amp up the banoffeeness. and i put some choc chips in the cake batter cos why not and it was yummy.
