I like cottage cheese and I am always looking for new and interesting breakfast ideas. This fit the bill nicely. Fast and tasty. Good effort to reward ratio! I will be putting this into the breakfast rotation.
I just tried this. Now, my recent go-to breakfast has been a concoction my suster has dubbed "Apple Vomit" which is cottage cheese, peanut butter, a touch of honey or maple syrup, and some cinnamon or pumpkin pie spice, so this is just a variation on that theme. I used a raw tahini (the sesame seeds are not toasted) and maple syrup because I'm out of honey, and topped it with banana. It scales down beautifully to one serving, and it is tasty!
Really tasty quick recipe. If anyone is in the UK, I cannot recommend the Longley Farm cottage cheese brand enough!
No sesame seeds on hand….tossed in chopped pistachios and didn’t need to add the salt. My newest cottage cheese crush!!
This is so yummy! I’ve adapted it as follows to get 40g of protein and 15g of fiber in a single serving: I mix 1c cottage cheese, 2-3 tsp of tahini, about a tsp of honey, 2-3 TBS hemp hearts and 1 TBS ground flax seeds, and then top with 2c mixed fresh fruit. Delicious, healthy, and keeps me full and energized for hours!
Wonderful addition to breakfast. Easy to make, wonderful combination of sweet and savory and your choice to fruit. Wouldn't change a thing. I eat this several times a week.
