Ingredients
- 4medium-thick asparagus, peeled
- 1teaspoon unsalted butter
- 1egg
- 2egg whites
- 2tablespoons skim milk
- Pinch of salt
- 1½tablespoons freshly grated Parmesan cheese
Preparation
- Step 1
Steam the asparagus for about three minutes, or until they just become tender.
- Step 2
Preheat the oven temperature to 400 degrees.
- Step 3
Butter a two-cup shallow baking dish.
- Step 4
Beat the egg and egg whites with the milk and add salt and Parmesan cheese. Pour mixture into the baking dish and place asparagus on top. Bake for 15 minutes, then serve.

This is a good basic recipe for a puffy omelette...or a souffle for one. But unless you are really cutting calories, it needs some serious flavor boost. Leftover lunch meat ham, a more interesting cheese shredded and shaved on top, fresh herbs, grape tomatoes sliced in half & mixed. Go nuts - it will only improve things!
