Yield:Four to 14 waffles, depending on the size of the waffle iron
  • cups flour
  • Salt to taste, if desired
  • 2teaspoons baking powder
  • 2whole eggs
  • 1cup, plus 6 tablespoons, milk
  • ¼cup melted butter
  • ½cup finely ground pecans
  • 2egg whites, stiffly beaten

Preparation

  1. Step 1

    Sift together the flour, salt and baking powder.

  2. Step 2

    Beat the whole eggs and gradually beat in the milk and butter. Add the flour mixture and beat with a wire whisk until smooth. Add the pecans. Beat until thoroughly blended. Fold in the egg whites. There should be about four and one-quarter cups.

  3. Step 3

    Add the mixture, an appropriate amount at a time, to the surface of an electric waffle iron. The volume will depend on the size of the iron. Cover and cook according to the manufacturer's instructions.

Added some spices ...cinnamon etc..and a little white sugar. Used gluten free flour. Great recipe!

I made this recipe twice today. The first time, I followed the recipe as written. The texture was good, but the flavor was nonexistent and boring. The second time I added a half a cup of sugar and a half a tablespoon of cinnamon, and that really makes it a five star recipe.

My kids loved it, but only after I added in a half cup of sugar some blueberries and cherries. Those touches made the recipe perfect; otherwise it was bland.
