Original Plum Torte

Ingredients
¾ to 1 cup sugar
½ cup unsalted butter, softened
1 cup unbleached flour, sifted
1 teaspoon baking powder
Pinch of salt (optional)
2 eggs
24 halves pitted purple plums
Sugar, lemon juice and cinnamon, for topping
Preparation
- Step 1
Heat oven to 350 degrees.
- Step 2
Cream the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs and beat well.
- Step 3
Spoon the batter into a springform pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 teaspoon of cinnamon, depending on how much you like cinnamon.
- Step 4
Bake 1 hour, approximately. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. (To serve a torte that was frozen, defrost and reheat it briefly at 300 degrees.)
To freeze, double-wrap the torte in foil, place in a plastic bag and seal.

Hi - I'd like clarification on the flour --- 1 C flour, sifted - is that one cup of flour and sift and add, or sift the flour to equal one cup of flour - makes a difference. Thank you.
In 1988 my Toronto newspaper was about to post me to Beijing as a foreign correspondent. Alas, my house wasn't selling. I'd read that the fragrance of baking helps so I bought a frozen loaf of bread, and warmed it in the oven. No sale. Desperate, I baked this torte for an open house. Ta-dah! With the kitchen infused with the sweet perfume of Original Plum Torte, the house sold.
Sifted flour means sift then measure.
Flour, sifted means measure them sift.
I knew it would be good, but wow. As a stone fruit fanatic and lazy baker I can’t believe it took me so long to come across this recipe. I can’t wait to try it with nectarines, peaches, cherries… I used very ripe black plums and this was perfection. Begs for a scoop of vanilla ice cream on top IMO.
This was absolutely phenomenal. I only had two large plums so I cut the plums into large chunks and added leftover sour and sweet cherries (halved and pitted). Also added a touch of almond extract and flor di sicilia (orange/lemon extract) and a sprinkle of sparkling sugar across the top instead of regular sugar. So, so good.
I just made a second plum torte in 3 days since the first one disappeared so quickly. This may be my favorite baking recipe already since it’s just so darn easy (no mixer, few ingredients, the perfect combo of tart and sweet, and makes me look like a master baker with little effort! I got Italian plums from the farmers market as they are in season and my husband tried one and commented that they aren’t very juicy. I think that’s why they work so well in the torte! The folks who complained about a soggy middle probably had very ripe plums and/or used the round, red plums that tend to be juicier. With a 9” springform pan mine is done in 35-40 mins.
