I marinate with olive oil lime juice garlic cilantro and soy. The oil gives it a nice char while the rest give the meat and great flavor for the tortilla
Use cotija cheese. Or pork and marinate differently
Cube the steak when done, so much easier to eat in tacos. Make sure to salt sufficiently, add lime juice to salsa. We used flank steak, needed more like 4 min/side
Didn’t notice the direction to broil the steak and simply pan fried it. Delicious with the pineapple and jalapeño salsa. I suspect if I had broiled the steak it would have been less appetising as other comments have indicated.
First time commenter after trying dozens of NYT recipes over the last 2 years of membership. Steak was almost inedibly tough as written. My husband’s response: “What I’d expect from NYT cooking.” We’ve been so underwhelmed by “recipes” like this and many others that try to be “fancy” when the family just wants classic good cooking. If you attempt this, definitely marinate it… or better yet find an actual recipe instead of whatever this is. Once again wondering, “Why am I paying for this membership?”
I whipped up a quick marinade with olive oil, lime juice, soy sauce, garlic, cilantro, and honey. Seared the steak in a cast iron skillet. Super easy and quick meal!
