Watermelon and Ginger Spritzer

Ingredients
6 cups seedless watermelon, cubed
1 cup fresh lime juice
½ cup sugar
1 tablespoon honey
3 tablespoons grated fresh ginger
1 cup seltzer
Fresh mint leaves for garnish
Preparation
- Step 1
Put watermelon into blender in batches and process until smooth. Strain through a sieve and discard solids.
- Step 2
Combine lime juice, sugar, honey and ginger in a bowl. Whisk until sugar dissolves.
- Step 3
Combine lime mixture and watermelon with seltzer, pour into tall glasses over ice, and garnish with mint. Or combine lime and watermelon and chill for several hours before adding seltzer to allow for deeper development of ginger flavor.

I made this last night except froze the watermelon beforehand and added some coconut water to blend it. Combined with the ginger, lime juice, honey and tequila (no seltzer) for a fantastic frozen margarita.
This was a big hit at a party I brought it to last week and is very versatile for adaptations. I used my juicer for the watermelon and ginger (no need to peel either and less pulp left in the juice). And, I offered an alcoholic version, using about 1/2 and 1/2 watermelon/ginger juice and Proseco, and a couple of ounces of fizzy water...delicious. The leftover juice has been wonderful with a shot of vodka over ice for and end-of-hot day refresher.
Excellent! Wonderful summer drink. I recommend mixing everything except the seltzer in a blender, then chill for a while, then strain, then serve with seltzer. This lets the ginger and other flavors develop, and strains out the solids of both watermelon and ginger. You don't want ginger fiber in the drink. And the lime juice helps the watermelon blend, which is hard without any liquid.
